The coffee that’s handpicked comes out as gourmet because the pickers are able to tell the difference between the raw berries from the right berries. This extends into the sorting process. Whereas machines will speed up the time in which one can sort the batches, only a human can pick the bad berries from the good ones. The result of this is that mass-produced coffee grounds wind up with a mixture of good and bad—ripe and raw—berries all ground up together. The resulting product usually doesn’t taste terrible, however it does lack the nuance of flavor that gourmet coffee has.
